  • 1 piece 4-pound boneless skin-on turkey breast
  • 2 tablespoons olive oil, divided
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 3 medium red potatoes, cut into 1-inch cubes
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 medium yellow onion, cut into wedges
  • 3 cloves garlic, minced
  • 1/4 cup low sodium chicken broth

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, salt, and smoked paprika to make Cajun seasoning.
  • Rub turkey with 1 tbsp olive oil and Cajun seasoning. Toss vegetables with remaining oil, salt, and pepper. Place turkey on vegetables in a roasting pan.
  • Pour chicken broth into pan, cover with foil, and bake 45 minutes. Remove foil and bake 30 more minutes until internal temp reaches 165°F.
  • Rest turkey 10 minutes, then slice and serve with vegetables.

Ensure the turkey reaches an internal temperature of 165°F for safety.
