Instructions
Preheat oven to 350F and spray a casserole dish.
Sauté bell pepper, onion, garlic, and jalapeno in oil for 3-4 minutes.
Add green beans and Cajun seasoning; cook 1-2 minutes, then stir in cream cheese until melted.
Mix in cauliflower rice, turkey, ½ cup cheese, and eggs; transfer to dish and top with remaining cheese.
Bake for 30 minutes until bubbly and golden. Rest 10 minutes, then garnish with parsley.
Notes
Use cooked chicken if preferred. Adjust Cajun seasoning to taste.
