A fresh and flavorful pasta salad combining mozzarella, cherry tomatoes, basil, and a balsamic glaze dressing, perfect for a quick summer meal or side dish.

Ingredients

Pasta

  • 1 lb fusilli pasta
  • 1 tbsp kosher salt
  • 1 8-oz ciliegine fresh mozzarella cheese balls (halved)
  • 2 pints cherry or grape tomatoes (halved)
  • 0.5 cup fresh basil (roughly chopped)
  • 1 tsp ground pepper
  • to taste N/A Balsamic glaze
  • 1.5 cups packed fresh basil leaves
  • 6 tbsp extra virgin olive oil
  • 3 tbsp white balsamic vinegar
  • 2 cloves garlic (smashed)
  • 3/4 tsp kosher salt
  • 1/2 tsp ground pepper
  • 1-2 tbsp water (to adjust consistency)

Instructions 

  • Boil water with salt, cook pasta al dente, then drain and return to pot.
  • Blend basil, garlic, salt, pepper, and olive oil until smooth; add water to adjust consistency.
  • Toss warm pasta with basil vinaigrette and let sit for 30 minutes.
  • Add mozzarella, tomatoes, basil, and pepper; toss to combine.
  • Adjust seasoning, plate, and drizzle with balsamic glaze before serving at room temperature.

Notes

For best flavor, let the salad sit at room temperature before serving.
