Delicious and healthy carrot cake bars made with dates, nuts, and spices, perfect for a quick snack or dessert.

Ingredients

Dried Fruits and Nuts

  • 1.5 cups soft medjool dates, pitted (about 200g)
  • 0.5 cup raisins (75g)
  • 1 cup oats (80g)
  • 1 cup walnuts (100g)
  • 0.5 cup desiccated coconut (42g)
  • 0.5 cup grated carrot (1 med carrot)
  • Zest of an orange and 2 tbsp of juice orange zest and juice
  • 1.5 tsp ground cinnamon
  • 1 tsp ground ginger
  • 0.25 tsp sea salt
  • a drizzle dairy free white chocolate and chopped walnuts (optional topping)

Instructions 

  • Preheat oven to 180°C (350°F).
  • Add all ingredients to a food processor and blitz until gooey and smooth.
  • Press the mixture into a lined 20cm (8in) baking tin and bake for 20 minutes.
  • Allow to cool, then cut into 10 bars and optionally drizzle with white chocolate and add chopped walnuts.

Notes

Store in an airtight container for up to a week.
