Delight in these moist and flavorful mini carrot cake bites, perfect for a quick snack or dessert.

Ingredients

Dry ingredients

  • 1 1/2 cups finely grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet ingredients

  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Add-ins

  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup crushed pineapple, drained
  • Optional: 1/4 cup shredded coconut (if using)

Instructions 

  • Preheat oven to 350°F (175°C) and line a mini muffin pan.
  • Mix dry ingredients in a bowl; beat eggs with oil and vanilla.
  • Combine wet and dry; fold in carrots, nuts, pineapple, and coconut.
  • Spoon batter into pan; bake 18-20 minutes until a toothpick comes out clean.
  • Cool for 5 minutes in pan, then transfer to wire rack to cool completely.

Notes

For best results, use fresh grated carrots and drained pineapple.
