A warm and flavorful carrot ginger soup perfect for a cozy meal. Made with fresh ingredients and a creamy coconut milk finish.

Instructions
Preheat oven to 425°F. Roast carrots on a lined baking sheet with 1 tbsp olive oil until caramelized, 25-30 mins.
Cook diced onion in 1 tbsp olive oil until soft, 5-7 mins. Add garlic, ginger, coriander, turmeric; cook 30 sec.
Add vegetable broth and roasted carrots to the pot. Puree until smooth, reserving some carrots for topping.
Stir in coconut milk, heat through, then serve topped with cilantro and crusty bread if desired.
Notes
For extra flavor, add a squeeze of lime or a dash of chili flakes.
