Instructions
Cook ground beef and onions in a large pot until browned and softened, then drain excess grease.
Add garlic and cook for 1 minute, then stir in broth, potatoes, paprika, salt, and pepper. Simmer until potatoes are tender.
Gradually melt in shredded cheddar cheese, stirring continuously. Add cream and heat through.
Mix cornstarch with water, then stir into the soup to thicken. Cook for a few more minutes.
Garnish with parsley and extra cheese before serving.
Notes
For a creamier texture, blend a portion of the soup before serving.
