A hearty and comforting soup combining ground beef, potatoes, and melted cheddar cheese for a satisfying meal.

Ingredients

Meat and Aromatics

  • 1 pound ground beef
  • 1 large yellow onion (finely diced (about 1 ½ cups))
  • 1 teaspoon garlic (minced)

Broth and Potatoes

  • 4 cups beef broth (32 ounces / 960 g)
  • 2 pounds Yukon Gold potatoes (peeled, diced (about 4 cups))
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper (to taste)

Cheese and Dairy

  • 1 ½ cups mild cheddar cheese (shredded (plus more for garnish))
  • 1 cup heavy whipping cream
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Garnish

  • parsley (chopped for garnish)

Instructions 

  • Cook ground beef and onions in a large pot until browned and softened, then drain excess grease.
  • Add garlic and cook for 1 minute, then stir in broth, potatoes, paprika, salt, and pepper. Simmer until potatoes are tender.
  • Gradually melt in shredded cheddar cheese, stirring continuously. Add cream and heat through.
  • Mix cornstarch with water, then stir into the soup to thicken. Cook for a few more minutes.
  • Garnish with parsley and extra cheese before serving.

Notes

For a creamier texture, blend a portion of the soup before serving.
