Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Canned Goods

  • 1 can (15 ounces) enchilada sauce
  • 1 can (10 ounces) diced tomatoes with green chilies

Spices

  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Tortillas and Cheese

  • 8 corn tortillas corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Garnish

  • 0.25 cup chopped fresh cilantro (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch dish.
  • Cook beef with onion and garlic until browned, then add sauces and spices; simmer 5 minutes.
  • Layer tortillas, beef mixture, and cheddar cheese in the dish; repeat layers.
  • Top with Monterey Jack cheese, cover, and bake 20 minutes. Remove foil and bake 10 more minutes.
  • Garnish with cilantro, let cool slightly, then serve.

Notes

For a spicier version, add more chili powder or diced jalapeños.
