A quick and flavorful skillet dish combining seasoned beef, rice, beans, and cheese, topped with fresh garnishes for a satisfying meal.

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef
  • ½ medium onion diced
  • 3 tbsp taco seasoning
  • ½ cup prepared salsa (any salsa that is not thick and chunky)
  • 15 oz can black beans drained and rinsed
  • 15 oz can sweet corn not drained
  • 10 oz can diced tomatoes and green chiles
  • 8.5 oz bag Ready Rice (microwaved according to package directions)
  • 4 oz Colby Jack cheese shredded (from the block)

Optional Garnishes

  • fresh cilantro (for garnish)
  • sliced avocado (for garnish)
  • sour cream (for serving)
  • crushed tortilla chips (for topping)

Instructions 

  • Heat a large oven-safe skillet over medium heat and cook ground beef and onions until no longer pink, about 8-10 minutes.
  • Add taco seasoning and salsa, stir to combine, then add black beans, corn, and diced tomatoes. Simmer for 5-6 minutes.
  • Stir in cooked rice, top with shredded cheese, and broil until cheese bubbles, about 1 minute.
  • Garnish with cilantro, avocado, sour cream, and crushed tortilla chips before serving.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
