Ingredients

Noodles

  • 9 pieces lasagna noodles
  • 3 cups cooked chicken breast, shredded
  • 1.5 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 cups Alfredo sauce
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions 

  • Preheat oven to 375°F (190°C). Spread 1/2 cup Alfredo sauce in a baking dish.
  • Cook lasagna noodles until al dente, then drain.
  • Mix shredded chicken, ricotta, 1/2 cup mozzarella, Parmesan, garlic powder, salt, and pepper.
  • Spread filling on noodles, roll up, and place seam-side down in dish.
  • Spoon remaining Alfredo sauce over rolls, sprinkle with remaining mozzarella, and bake 25-30 mins until bubbly.
  • Garnish with parsley before serving.

Notes

For a lighter version, use reduced-fat cheese and low-sodium Alfredo sauce.
