Delight in these creamy, cheesy chicken lasagna roll-ups, perfect for a comforting family dinner with rich Alfredo sauce.

Ingredients

Pasta

  • 12 pieces lasagna noodles, uncooked
  • 2 cups small-curd cottage cheese
  • 2 large eggs
  • 2 cups shredded mozzarella cheese, divided
  • 3 cups cooked rotisserie chicken, shredded or diced
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 ½ cups heavy cream
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • teaspoon ground nutmeg
  • ¼ teaspoon red pepper flakes (optional)
  • 1 ½ cups freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions 

  • Preheat oven to 350°F (175°C). Cook noodles until al dente, drain, and set aside.
  • Mix cottage cheese, eggs, 1 ½ cups mozzarella, and chicken. Spread ¾ cup Alfredo sauce in baking dish.
  • Prepare Alfredo sauce: melt butter, cook garlic, whisk in flour, then cream and seasonings. Add Parmesan until smooth.
  • Spread sauce over dish, fill noodles with chicken mixture, roll up, and place seam-side down. Cover with remaining sauce and cheese.
  • Bake for 25-30 minutes until bubbly and golden. Garnish with parsley before serving.

Notes

For best results, let the roll-ups rest for 5-10 minutes before serving.
