Instructions
Preheat oven to 350°F (175°C). Cook noodles until al dente, drain, and set aside.
Mix cottage cheese, eggs, 1 ½ cups mozzarella, and chicken. Spread ¾ cup Alfredo sauce in baking dish.
Prepare Alfredo sauce: melt butter, cook garlic, whisk in flour, then cream and seasonings. Add Parmesan until smooth.
Spread sauce over dish, fill noodles with chicken mixture, roll up, and place seam-side down. Cover with remaining sauce and cheese.
Bake for 25-30 minutes until bubbly and golden. Garnish with parsley before serving.
Notes
For best results, let the roll-ups rest for 5-10 minutes before serving.
