Instructions
Whisk together peanut butter, soy sauce, lime juice, brown sugar, and ginger to make the peanut sauce. Set aside.
Peel and shred carrots, dice shallots, mince garlic, grate ginger, and chop cilantro.
Cook ground chicken, carrots, and shallots in oils until chicken is browned and crumbled.
Add garlic and ginger to the chicken mixture, cook for a few more minutes.
Stir in hoisin sauce, cook until heated through, then remove from heat and fold in cilantro.
Serve spooned into lettuce leaves, drizzle with peanut sauce before eating.
Notes
For best flavor, re-whisk the peanut sauce before serving.
