Ingredients

Protein

  • 2 pounds lean ground chicken
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons vegetable oil
  • 3 large carrots peeled and finely shredded
  • 3 shallots finely diced shallots
  • 6 large garlic cloves minced
  • 6 tablespoons ginger peeled and freshly grated
  • 3/4 cup hoisin sauce
  • 1 cup fresh cilantro leaves chopped
  • 4 tablespoons creamy peanut butter
  • 2 tablespoons reduced sodium soy sauce
  • 1 lime freshly squeezed lime juice
  • 1 tablespoon light brown sugar
  • 1 garlic clove minced garlic
  • 1 teaspoon ginger peeled and freshly grated
  • 2 heads butter lettuce

Instructions 

  • Whisk together peanut butter, soy sauce, lime juice, brown sugar, and ginger to make the peanut sauce. Set aside.
  • Peel and shred carrots, dice shallots, mince garlic, grate ginger, and chop cilantro.
  • Cook ground chicken, carrots, and shallots in oils until chicken is browned and crumbled.
  • Add garlic and ginger to the chicken mixture, cook for a few more minutes.
  • Stir in hoisin sauce, cook until heated through, then remove from heat and fold in cilantro.
  • Serve spooned into lettuce leaves, drizzle with peanut sauce before eating.

Notes

For best flavor, re-whisk the peanut sauce before serving.
