Ingredients

  • 2 lb chicken thigh, cut into bite-sized pieces
  • 7 ounces unsweetened coconut milk
  • 1 tsp ground turmeric
  • as required salt and ground black pepper
  • 2 tsp coconut flour
  • 3 tbsp desiccated coconut
  • 1 tbsp coconut oil, melted

Instructions 

  • Mix chicken, coconut milk, turmeric, salt, and black pepper; marinate overnight.
  • Preheat oven to 390°F (200°C).
  • Combine coconut flour and desiccated coconut; coat chicken pieces evenly.
  • Arrange chicken on a baking sheet, drizzle with melted coconut oil, and bake for 20-25 minutes.
  • Cool slightly, transfer to a platter, and serve warm.

Notes

Ensure chicken is fully cooked before serving.
