Instructions
Heat oil or butter in a large pot. Sauté onion, celery, and carrots until soft (~5-7 min).
Add garlic and thyme; cook for 1 min until fragrant.
Stir in wild rice, broth, salt, and pepper. Bring to boil, then simmer covered for 45 min until rice is tender.
Whisk flour with milk, then slowly add to soup while stirring. Add cooked chicken and simmer 10-15 min until thickened.
Adjust seasoning as needed. Serve hot, garnished with parsley if desired.
Notes
For a creamier texture, you can add more milk or half-and-half before serving.
