Ingredients

For the Chicken Marinade

  • 2 pounds chicken breasts cubed
  • 0.25 cup chipotle peppers in adobo
  • 0.5 cup plain Greek yogurt
  • 1 tablespoon honey
  • 2 teaspoons lime juice
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 2 tablespoons water

For the Black Beans

  • 2 15-ounce cans black beans
  • 1 teaspoon minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon oregano

For the Cilantro Lime Rice

  • 2 cups cooked rice
  • 1 teaspoon salt
  • 2 tablespoons lime juice
  • 0.5 cup chopped fresh cilantro

Instructions 

  • Marinate chicken with chipotle peppers, yogurt, honey, lime juice, salt, cumin, and water for at least 30 minutes.
  • Cook marinated chicken in a skillet over medium heat until fully cooked.
  • Heat black beans with garlic, cumin, and oregano in a separate pot.
  • Mix cooked rice with salt, lime juice, and cilantro.
  • Assemble bowls with rice, chicken, black beans, and toppings.
