Ingredients
Rice and Cooking Liquid
1 1/4cupsuncooked rice of choice(follow box directions or preferred method)
1tablespoonavocado oil or olive oil
Ground Turkey
1poundlean ground turkey
1/2teaspoonsalt
Vegetables
1redbell pepper(diced)
1yellowbell pepper(diced)
1/2largeonion(diced)
2jalapenosjalapenos(diced, seeds removed)
2clovesgarlic(minced)
2teaspoonscumin powder
2/3cupmild salsa
3tablespoonschipotle pepper hot sauce
Kale
2cupskale leaves(roughly chopped, stalks removed)
Garnish and Serve
to tastecilantro and guacamole(optional)
Instructions
Cook rice according to package instructions.
Heat oil in a skillet, cook ground turkey with salt until just cooked through, about 5-6 minutes.
Add peppers, onion, jalapenos, garlic, cumin, salsa, and chipotle sauce. Cook 7-8 minutes until vegetables soften and liquid reduces. Stir in kale until wilted, then remove from heat.
Divide cooked rice into containers, top with turkey mixture, garnish with cilantro, and serve with guacamole if desired.
Notes
Store leftovers in an airtight container for up to four days in the refrigerator or three months in the freezer.
