A flavorful and healthy summer dish featuring grilled cod served over a spicy vegetable sauté, finished with fresh lime and cilantro.

Ingredients

Protein

  • 8 oz cod filet(s)

Seasonings

  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 tsp cumin (divided)
  • 1.5 tsp chipotle chili powder (divided)

Vegetables

  • 1 cup corn kernels
  • 1 cup chopped mushrooms
  • 1 cup chopped zucchini

Dairy & Liquids

  • 0.5 cup half and half
  • 2 Tbsp fresh lime juice (about 1 medium lime)

Herbs & Citrus

  • 2 Tbsp chopped cilantro

Oils

  • 1 Tbsp olive oil

Instructions 

  • Pat cod dry, season with salt, pepper, 1/2 tsp cumin, and 1 tsp chipotle chili powder. Grill for 6-8 minutes, turning carefully.
  • While fish cooks, heat olive oil in a skillet over medium-high, sauté corn, zucchini, and mushrooms for 5 minutes.
  • Add half and half, remaining cumin, and chili powder; simmer for 1 minute.
  • Place fish on veggie bed, squeeze lime juice over dish, and top with cilantro. Serve immediately.

Notes

Ensure not to overcook the fish for best flavor and texture.
