Instructions
Pat cod dry, season with salt, pepper, 1/2 tsp cumin, and 1 tsp chipotle chili powder. Grill for 6-8 minutes, turning carefully.
While fish cooks, heat olive oil in a skillet over medium-high, sauté corn, zucchini, and mushrooms for 5 minutes.
Add half and half, remaining cumin, and chili powder; simmer for 1 minute.
Place fish on veggie bed, squeeze lime juice over dish, and top with cilantro. Serve immediately.
Notes
Ensure not to overcook the fish for best flavor and texture.
