Enjoy a flavorful and healthy salmon salad wrapped in low carb tortillas, perfect for a quick lunch or dinner.

Ingredients

Canned Salmon

  • 2 cans boneless skinless pink salmon in water
  • 1/4 cup chipotle lime avocado mayo (plus 1T. for each wrap)
  • 1 T. additional chipotle lime avocado mayo
  • 1/3 cup chopped walnuts
  • 1/3 cup sliced grapes
  • 4 wraps low carb wraps
  • 4 handfuls baby spinach
  • 1 lime lime for zesting

Instructions 

  • Drain salmon and place in a medium bowl.
  • Add 1/4 cup mayo, chopped walnuts, and sliced grapes; mix well.
  • Lay spinach on each wrap, add a dollop of mayo, then top with salmon mixture.
  • Zest lime over the wraps before serving.

Notes

Use fresh lime for the best flavor and adjust mayo amount to taste.
