Make your cilantro yogurt sauce. Set aside in the fridge.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
Mix salmon with oil, lime zest, lime juice, sugar, spices, salt, and pepper. Bake for 15-20 minutes.
Prepare the avocado peach salsa by combining all ingredients. Chill until ready.
Char tortillas if desired, then assemble tacos with salmon, cabbage, salsa, jalapeños, and a drizzle of cilantro yogurt sauce. Garnish with extra cilantro and jalapeños. Serve.
