A decadent dessert featuring a rich, molten chocolate center with a tender cake exterior, perfect for chocolate lovers.

Ingredients

Chocolate and Butter

  • 200 grams Dark chocolate (60–72% cocoa), finely chopped
  • 113 grams Unsalted butter

Eggs and Sugar

  • 3 large Large eggs
  • 2 extra yolks Additional egg yolks
  • 150 grams Granulated sugar

Dry ingredients

  • 60 grams All-purpose flour, sifted
  • 10 grams Cocoa powder (for dusting ramekins)

Flavor Enhancers

  • 1 teaspoon Vanilla extract
  • 1 pinch Kosher salt
  • 1 teaspoon Espresso powder

Additional

  • Cocoa powder Cocoa powder (for dusting ramekins)
  • Vanilla ice cream, fresh berries, powdered sugar Garnishes and serving

Instructions 

  • Butter and dust ramekins with cocoa powder.
  • Combine chopped chocolate and butter; melt until smooth.
  • Whisk eggs, yolks, sugar, salt, and vanilla until pale.
  • Gradually fold in sifted flour and cocoa powder.
  • Stream in cooled chocolate mixture, fold gently, then pour into ramekins.
  • Bake at 220°C (425°F) for 12–14 minutes until edges are set and center is jiggly.

Notes

For a richer flavor, add a pinch of chili powder or top with nuts or caramel drizzle.
