These no-bake Chocolate Energy Bites are a delicious and healthy snack, perfect for a quick energy boost.

Ingredients

Chocolate

  • 0.75 cup dark chocolate chips (coarsely chopped)
  • 1 cup creamy peanut butter
  • 0.5 cup honey
  • 2 tablespoons Dutch process cocoa powder (see note 1)
  • 0.125 teaspoon salt
  • 5 tablespoons chocolate protein powder
  • 1.5 cups old-fashioned oats
  • 1 teaspoon vanilla extract

Instructions 

  • Coarsely chop the chocolate into small pieces.
  • In a large bowl, combine chopped chocolate, peanut butter, honey, cocoa powder, salt, protein powder, oats, and vanilla. Beat until well mixed.
  • Use a cookie scoop or 1-tablespoon measure to form dough into balls. Place on parchment-lined plate.
  • Freeze for 15 minutes before serving.

Keep stored in an airtight container in the freezer for best freshness.
