Ingredients

Dough

  • 1 cup rolled oats (Use old-fashioned rolled oats for texture.)
  • 1 cup all-purpose flour (Measure by spooning into the cup and leveling.)
  • 0.5 cup brown sugar (Pack down for proper measurement.)
  • 0.5 cup granulated sugar
  • 0.5 cup unsalted butter (Softened, not melted, helps create a tender cookie.)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup fresh blueberries (Toss frozen blueberries in a tablespoon of flour to limit bleeding.)

Instructions 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Mix oats, flour, brown sugar, granulated sugar, baking soda, and salt in a bowl.
  • Cream softened butter with egg and vanilla, then combine with dry ingredients.
  • Gently fold in blueberries, tossing frozen berries in flour beforehand.
  • Drop spoonfuls onto prepared baking sheets and bake for 12 minutes.

Notes

For softer cookies, slightly underbake and let cool on the baking sheet.
