Ingredients

Dry ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar

Wet ingredients

  • 1 cup coconut milk
  • 1 large egg egg
  • 2 tablespoons melted coconut oil (plus more for cooking)
  • 1 teaspoon vanilla extract

Optional

  • 1/2 cup shredded coconut (optional)

Instructions 

  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients in a separate bowl.
  • Combine wet and dry, fold in coconut if using.
  • Heat skillet with coconut oil, pour batter, cook until bubbles form, then flip.
  • Cook until golden, serve warm.

Notes

For extra flavor, top with toasted coconut or fresh fruit.
