A flavorful and healthy baked cod dish simmered in a fragrant coconut curry sauce, perfect served over rice.

Instructions
Preheat oven to 400°F (200°C). Lightly oil a baking dish.
Sauté onion, garlic, and ginger in olive oil until fragrant and soft.
Add spices and toast for 1 minute, then pour in coconut milk, lime juice, salt, and pepper. Simmer briefly.
Place cod fillets in the dish, pour sauce over, and top with cherry tomatoes and chili slices.
Bake for 20–25 minutes until fish flakes easily. Serve over rice, garnished with cilantro.
Notes
Adjust salt and spice levels to taste. For extra heat, add more chili slices.
