Ingredients

For the Slaw

  • cup mayonnaise, or plain yogurt
  • 1 tablespoon taco seasoning
  • 2 tablespoons fresh lime juice
  • 2 cups shredded cabbage
  • 1 cup shredded red cabbage, chopped
  • 1 to 2 large carrots, shredded
  • ½ cup fresh cilantro

For the Fish

  • 3 tablespoons olive oil
  • 1 tablespoon taco seasoning

For the Salsa

  • 1 tablespoon olive oil
  • 1 cup frozen corn kernels, thawed

For Serving

Instructions 

  • Whisk together mayonnaise (or yogurt), taco seasoning, and lime juice for the slaw.
  • Combine cabbage, red cabbage, carrots, green onions, and cilantro; toss with ¼ cup dressing. Set aside.
  • Pat fish dry, brush with oil, sprinkle with taco seasoning, and cook in a skillet for 4-7 minutes until cooked through.
  • Sauté onion, bell pepper, and jalapeño in oil for 1 minute, add corn and beans, cook 1-2 minutes, then squeeze lime juice and add green onions.
  • Assemble bowls with slaw, salsa, fish, avocado, and garnish with lime wedges and cilantro.
