A vibrant and healthy dish featuring tender cod, hearty grains, and a fresh herby green sauce.

Ingredients

Protein

  • 2 pieces cod
  • 1 tsp teaspoon salt
  • 0.5 tsp teaspoon pepper

Grains & Vegetables

  • 1 cup cup giant couscous
  • 2 medium courgettes
  • 1 roasted green chilli roasted green chilli (for sauce)
  • 2 spring onions spring onions

Herbs & Oils

  • 2 tbsp tablespoons parsley
  • 2 tbsp tablespoons basil
  • 2 tbsp tablespoons olive oil
  • 1 tbsp tablespoon lemon juice

Instructions 

  • Season the cod with salt and pepper.
  • Grill the cod quickly in an air fryer or oven.
  • Blend roasted green chilli, spring onions, parsley, basil, olive oil, and lemon juice to make the green sauce.
  • Char the courgettes and mix with the giant couscous.
  • Plate grains and veg, top with grilled fish, and drizzle with green sauce.

Notes

Use fresh herbs for best flavor.
