Ingredients

  • 1.5 cups corn kernels (fresh, canned, or grilled)
  • 1 ripe avocado avocado, diced
  • 1 cup cherry tomatoes, halved or quartered
  • 0.25 cup red onion, finely chopped
  • 1-2 tablespoons fresh lime juice (to taste)
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • ½ jalapeño, finely chopped Optional: jalapeño

Instructions 

  • Prepare the corn: boil, grill, or thaw, then char until lightly golden.
  • Combine corn, avocado, tomatoes, onion, and jalapeño in a bowl.
  • Drizzle with lime juice and olive oil.
  • Add cilantro, salt, and pepper; toss gently.
  • Serve immediately or chill; add avocado and lime just before serving.
