Ingredients

Bread

  • 2 slices whole grain or sourdough bread

Dairy

  • 4 tablespoons cottage cheese
  • 2 large eggs

Fats

  • 1 tablespoon butter or olive oil

Seasonings & Garnishes

  • to taste Salt
  • to taste Freshly ground black pepper
  • for garnish Chopped fresh chives or green onions
  • optional Chili flakes or paprika (for some spice)

Instructions 

  • Preheat a skillet over medium heat and add butter or olive oil.
  • Toast bread slices until golden and crispy.
  • Spread cottage cheese evenly over each toast.
  • Crack an egg onto each toast, cover, and cook for 3-5 minutes until whites are set.
  • Season with salt, pepper, and optional spices; garnish with herbs and chives. Serve warm.
