A flavorful and nutritious bowl combining tender chicken, creamy avocado sauce, and fluffy rice, perfect for a quick and satisfying meal.

Ingredients

Rice

  • 1 cup uncooked rice (jasmine or basmati)

Chicken

  • 2 pieces boneless, skinless chicken breasts (about 1 pound total)

Avocado

  • 2 pieces ripe avocados

Olive Oil

  • 1 tablespoon olive oil (extra virgin)

Lime

  • 1 piece lime

Seasonings

  • to taste Salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Optional toppings

  • various Fresh cilantro, cherry tomatoes, black beans, corn, shredded cheese, hot sauce (for garnish and optional add-ons)

Instructions 

  • Rinse rice and cook with water and salt until tender, then fluff.
  • Season chicken with salt, pepper, garlic powder, and paprika. Cook in a skillet with olive oil until golden and cooked through, then rest and slice.
  • Blend avocados with lime juice, salt, and water until smooth to make the sauce.
  • Assemble bowls starting with rice, topped with sliced chicken, then drizzle with avocado sauce. Add optional toppings as desired.
