Instructions 

  • Toast the bread slices until golden brown.
  • Mash the avocado with lemon juice, olive oil, salt, and pepper.
  • Spread the avocado mixture evenly on the toasted bread.
  • Poach the eggs until whites are set but yolks are runny, about 3-4 minutes.
  • Top each toast with a poached egg, garnish with herbs, cherry tomatoes, feta, microgreens, and red pepper flakes.

Notes
