A delicious and creamy one-pan dish featuring tender chicken and vibrant broccoli, perfect for a quick weeknight dinner.

Ingredients

Meat

  • 907 g chicken fillets

Seasonings

  • kosher salt (to taste)
  • freshly cracked black pepper (to taste)
  • 0.5 teaspoon paprika
  • 60 g butter (divided for cooking)
  • 4 to 5 cloves garlic (minced)
  • 298 g condensed cream of chicken soup ((1 can), or more if needed)
  • 240 ml water
  • 480–710 ml broccoli (chopped)
  • 5 ml fresh parsley (chopped)

Optional

  • lemon wedges (for serving)

Instructions 

  • Season chicken with salt, pepper, and paprika; set aside.
  • Melt 2 tablespoons of butter in a skillet, cook chicken for 5 minutes per side until browned, then keep warm.
  • Melt remaining butter, sauté garlic until fragrant, then whisk in soup and water until hot and bubbling.
  • Return chicken and add broccoli, cover, and simmer for 10 minutes until chicken is cooked through.
  • Serve warm over rice or pasta, garnished with parsley and lemon wedges if desired.

Notes

For firmer broccoli, add it later in the cooking process.
