Ingredients

Protein

  • 4 fillets cod fillets (6 ounces each)

Oil

  • 1 tbsp olive oil

Seasonings

  • 0.5 tsp salt
  • 0.25 tsp black pepper

Garlic

  • 3 cloves garlic, minced (9g)

Cream and Broth

  • 1 cup heavy cream (240ml)
  • 0.5 cup chicken broth (120ml)

Cheese

  • 0.5 cup grated Parmesan cheese (50g)

Sun-Dried Tomatoes

  • 0.5 cup sun-dried tomatoes, chopped (55g)

Vegetables

  • 3 cups baby spinach (90g)

Herbs & Seasonings

  • 0.5 tsp Italian seasoning (2g)

Instructions 

  • Heat olive oil in a skillet over medium-high heat.
  • Season cod with salt and pepper, sear 4 minutes per side, then set aside.
  • Sauté garlic for 1 minute, then add cream and broth, simmer.
  • Stir in Parmesan, sun-dried tomatoes, and Italian seasoning; simmer 3–4 minutes.
  • Add spinach, cook until wilted, then return cod to skillet and heat through.
