A delicious and comforting pasta dish perfect for using up leftover turkey with a creamy tomato sauce.
Ingredients

Pasta (fusillata)

cooked leftover turkey (about 2 full cups)

chopped tomatoes

tomato paste

cream cheese (garlic and herb or Boursin)

carrot

olive oil (or unsalted butter)

Red chili flakes

chicken stock
to taste
Salt and black pepper
Fresh parsley
Instructions
Saute diced onion and carrots in olive oil until soft.
Add tomato paste and garlic; cook for 1 minute.
Add tomatoes, turkey, basil, chili flakes, salt, and pepper; simmer 3 minutes.
Cook pasta in chicken stock until al dente, then stir in cream cheese until melted.
Simmer for 3-5 minutes, then garnish with parsley and serve.
Notes
Adjust seasoning to taste and enjoy!
