A delicious and comforting pasta dish perfect for using up leftover turkey with a creamy tomato sauce.

Ingredients

Pasta

  • 250 g Pasta (fusillata)
  • 1.1 lb cooked leftover turkey (about 2 full cups)
  • 400 g chopped tomatoes
  • 2 Tbsp tomato paste
  • 200 g cream cheese (garlic and herb or Boursin)
  • 1 large carrot
  • 2 Tbsp olive oil (or unsalted butter)
  • 1 medium onion
  • 4 cloves garlic
  • 1 tsp dried basil
  • as desired Red chili flakes
  • 800 ml chicken stock
  • to taste Salt and black pepper

Fresh parsley

Instructions 

  • Saute diced onion and carrots in olive oil until soft.
  • Add tomato paste and garlic; cook for 1 minute.
  • Add tomatoes, turkey, basil, chili flakes, salt, and pepper; simmer 3 minutes.
  • Cook pasta in chicken stock until al dente, then stir in cream cheese until melted.
  • Simmer for 3-5 minutes, then garnish with parsley and serve.

Notes

Adjust seasoning to taste and enjoy!
