A flavorful and creamy pasta dish featuring tender chicken, zesty lemon, and Parmesan cheese, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 1 lb boneless skinless chicken breast (sliced in half lengthwise to create thin cutlets)
  • 1/2 cup all-purpose flour
  • 2 teaspoons Italian seasoning (divided (1 tsp for chicken, 1 tsp for sauce))
  • 2 teaspoons lemon pepper seasoning
  • Kosher salt Kosher salt (to taste)
  • Freshly cracked black pepper black pepper (to taste)
  • 2 tablespoons olive oil (divided)
  • 1 lb spaghetti
  • 6 cloves garlic (finely minced)
  • 1 whole lemon (zested and juiced (about 3 tbsp juice))
  • 1.5 cups heavy cream
  • 1/2 cup Parmesan cheese (shaved)
  • 1/2 cup reserved pasta water
  • Fresh parsley parsley (chopped, for garnish)
  • Lemon wedges lemon wedges (for serving)

Instructions 

  • Cook spaghetti in salted boiling water until al dente, reserve 1/2 cup pasta water, then drain and toss with 1 tbsp olive oil.
  • Slice chicken in half lengthwise, season with Italian seasoning, lemon pepper, salt, and pepper. Dredge in flour.
  • Cook chicken in 1 tbsp olive oil until golden and cooked through, then set aside.
  • In the same pan, sauté garlic with remaining seasoning, then add lemon zest, juice, and cream. Simmer until thickened.
  • Stir in Parmesan, add cooked pasta and reserved water to coat, then return chicken and heat through. Garnish with parsley and lemon wedges.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce.
