A rich and creamy pasta dish featuring tender chicken and sautéed mushrooms, perfect for a comforting meal.

Ingredients

Pasta

  • 8 oz fettuccine or pasta of choice

Protein

  • 2 pieces boneless, skinless chicken breasts

Seasonings

  • 1 tsp salt
  • 0.5 tsp black pepper

Cooking Oils & Fats

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter

Vegetables

  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced

Liquids

  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions 

  • Cook pasta according to package instructions; drain and set aside.
  • Season chicken with salt and pepper, then cook in olive oil until browned; remove and set aside.
  • Sauté mushrooms and garlic in butter until mushrooms are tender.
  • Add chicken broth, heavy cream, Parmesan, and thyme; simmer until slightly thickened.
  • Return chicken to the sauce, add cooked pasta, and toss to combine. Garnish with parsley if desired.

Notes

For extra flavor, sauté some onions with the garlic.
