A quick and flavorful dish combining tender gnocchi with a creamy pesto sauce, perfect for a satisfying meal.

Ingredients

Gnocchi

  • 350 g potato gnocchi
  • 0.33 cup pesto
  • 50 g soft goat cheese
  • 1-2 cloves garlic, minced
  • 0.25 cup pecorino or parmesan cheese
  • 0.5 tsp freshly ground black pepper
  • 1 tsp lemon zest
  • 1 squeeze lemon (for juice)
  • to taste sea salt Sea salt

Fresh herbs for garnish

Instructions 

  • Cook gnocchi in boiling water until they float, then drain and set aside.
  • Add pesto, goat cheese, minced garlic, and a splash of cooking water to the same pot; melt cheese and mix.
  • Loosen the sauce with more cooking water, then stir in pecorino, black pepper, lemon zest, and lemon juice.
  • Add gnocchi back to the sauce and gently toss to coat. Season with salt as needed.
  • Serve garnished with fresh herbs, extra cheese, black pepper, and lemon zest if desired. Enjoy!

Notes

Use fresh herbs for the best flavor and adjust salt to taste.
