Ingredients

Pasta

  • 225 g pasta (fettuccine or spaghetti)

Sauce

  • 2 tablespoons olive oil
  • 150 g cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 240 ml heavy cream
  • 100 g baby spinach
  • 450 g salmon fillet, skin removed
  • salt and pepper, to taste
  • 2 tablespoons fresh dill or parsley, chopped
  • grated parmesan cheese, for serving

Instructions 

  • Boil salted water and cook pasta until al dente. Reserve ½ cup pasta water, then drain.
  • Season salmon with salt and pepper, cook in olive oil until flaky, then set aside.
  • Sauté garlic and tomatoes in the same skillet, then add heavy cream and simmer.
  • Add spinach to the sauce until wilted, then fold in flaked salmon and cooked pasta.
  • Adjust seasoning, stir in dill or parsley, and serve with grated parmesan.

Notes

For extra flavor, consider adding lemon zest or a splash of white wine to the sauce.
