A quick and flavorful keto-friendly dish featuring tender cod and crisp asparagus in a creamy Cajun sauce.

Ingredients

Protein

  • 1 pound Cod Fillets

Vegetables

  • 1/2 pound Asparagus (trimmed)

Fats & Oils

  • 3 tbsp Olive Oil (divided)
  • 2 tbsp Butter

Spices & Seasonings

  • 1.5 tbsp Cajun Seasoning
  • 2 tsp Minced Garlic

Dairy

  • 1/2 cup Heavy Whipping Cream

Broth & Liquids

  • 3 tbsp Vegetable Broth
  • for garnish Lemon Juice ((for garnish))

Instructions 

  • Pat the cod dry, drizzle with 1 tbsp olive oil, and sprinkle with ½ tbsp Cajun seasoning.
  • Heat 2 tbsp olive oil in a skillet over medium-high heat and sear the cod until cooked through and flaky. Remove and set aside.
  • Add asparagus to the skillet and sauté until crisp-tender. Remove and set aside.
  • Reduce heat to medium, melt butter, add garlic, then pour in cream, broth, and remaining Cajun seasoning. Simmer until thickened.
  • Return asparagus and cod to skillet, garnish with lemon juice, and serve.

Notes

Ensure not to overcook the cod to keep it flaky and tender.
