A quick and flavorful dish featuring tender chicken in a creamy spinach sauce, perfect for a satisfying meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)

Vegetables

  • 4 cups fresh spinach

Dairy

  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese

Broth & Seasonings

  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • to taste Salt and pepper

Oils

  • 2 tbsp olive oil

Instructions 

  • Season chicken with salt and pepper. Cook in olive oil until golden, then remove.
  • Sauté garlic in the same skillet for 1 minute.
  • Add chicken broth, heavy cream, and Italian seasoning; simmer until slightly thickened.
  • Stir in spinach and Parmesan until spinach wilts and cheese melts.
  • Return chicken to skillet, spoon sauce over, and cook for 5 minutes.

Notes

For extra flavor, sprinkle with additional Parmesan before serving.
