A flavorful and creamy chicken dish featuring tomatoes, basil, and a rich sauce, perfect for a quick dinner.

Ingredients

Protein

  • 2 pieces boneless skinless chicken breasts (roughly 1 lb or 454 grams)
  • 1 tablespoon canola oil
  • salt and pepper seasoning (to taste)
  • 1 tablespoon minced garlic (2-3 cloves)
  • 0.75 teaspoon salt
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon black pepper
  • 1 pinch crushed red pepper flakes (optional)
  • 398 ml canned diced tomatoes with Italian herbs
  • 0.75 cup tomato pasta sauce (marinara or seasoned tomato sauce)
  • 0.75 cup whipping cream (whole milk or half and half also work)
  • 1 tablespoon corn starch
  • 2 tablespoons freshly chopped basil (or 1 tablespoon basil pesto)

Garnish

  • to taste Parmesan cheese (freshly grated)

Instructions 

  • Halve chicken breasts lengthwise to ensure even cooking.
  • Heat oil in a skillet, season chicken with salt and pepper, then brown on both sides (2-4 minutes each).
  • Remove chicken, cook garlic, salt, basil, pepper, and red pepper flakes for 1 minute.
  • Add diced tomatoes and tomato sauce, then whisk in cream and corn starch. Return chicken to pan and simmer until cooked through and sauce thickens.

Notes

Serve with freshly grated Parmesan and extra basil for garnish.
