8ouncesrotini pasta uncooked
3tablespoonsbutter unsalted
1poundchicken breast skinless and boneless, cut into bite size pieces
2tablespoonschili powder
½teaspoonred chili flakes
½teaspoonsalt or to taste
¼teaspoonpepper or to taste
1cuptomatoes chopped
6green onionschopped
½cupparsley fresh, chopped
1cupheavy cream or half and half
½cupchicken broth low sodium or no sodium added
1cupmozzarella cheese shredded
Instructions
Cook the pasta until al dente, then drain and set aside.
Melt butter in a large skillet over medium-high heat. Add chicken, season with chili powder, chili flakes, salt, and pepper; cook until no longer pink (~5 min).
Add tomatoes, green onions, and parsley; cook for 2 minutes. Pour in cream and chicken broth; bring to a boil.
Stir in cooked pasta, then sprinkle with mozzarella cheese and optional parsley. Serve warm.
