Instructions
Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat, then cook chicken 6-7 minutes per side until golden and cooked through. Remove and set aside.
Pour in chicken broth and heavy cream, simmer 3-5 minutes until slightly thickened. Stir in rice and 3 cups chicken broth, bring to a boil, then reduce heat, cover, and simmer 15-20 minutes until rice is tender.
Return cooked chicken to skillet, sprinkle with Parmesan, cover 2-3 minutes until cheese melts. Add chopped spinach, let wilt, then garnish with fresh herbs if desired.
