Creamy Tuscan Chicken and Rice Recipe

A flavorful and creamy chicken and rice dish inspired by Tuscan flavors, perfect for a satisfying meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Oil

  • 2 tablespoons olive oil

Seasonings

  • to taste Salt and pepper

Vegetables

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes (optional) (for heat)

Liquids

  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Rice

  • 1 1/2 cups long-grain rice
  • 3 cups chicken broth for the rice

Greens

  • 1 cup spinach, chopped

Garnish

  • optional Fresh basil or parsley (for garnish)

Instructions 

  • Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat, then cook chicken 6-7 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, sauté chopped onion and minced garlic for 2-3 minutes until softened. Add sun-dried tomatoes, basil, oregano, garlic powder, and red pepper flakes; cook 1-2 minutes.
  • Pour in chicken broth and heavy cream, simmer 3-5 minutes until slightly thickened. Stir in rice and 3 cups chicken broth, bring to a boil, then reduce heat, cover, and simmer 15-20 minutes until rice is tender.
  • Return cooked chicken to skillet, sprinkle with Parmesan, cover 2-3 minutes until cheese melts. Add chopped spinach, let wilt, then garnish with fresh herbs if desired.

Notes

For extra flavor, use fresh herbs and adjust seasoning to taste.
