Creamy Tuscan Chicken Rice

A rich and flavorful dish featuring tender chicken in a creamy sauce with sun-dried tomatoes and spinach, served over rice.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil

Grains

  • 1 cup long-grain white rice, rinsed
  • 2 1/2 cups low-sodium chicken broth

Aromatics

  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced

Sun-dried Tomatoes

  • 1/2 cup sun-dried tomatoes packed in oil, drained and sliced

Greens & Dairy

  • 2 cups fresh baby spinach, packed
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp unsalted butter

Herbs & Garnish

  • to taste Fresh basil leaves, torn
  • for serving Additional Parmesan cheese

Instructions 

  • Season chicken with salt, pepper, and Italian seasoning.
  • Cook chicken in olive oil until golden, then set aside.
  • Sauté onion and garlic in butter until softened. Add sun-dried tomatoes and rice, toast for 1 minute.
  • Pour in broth, cover, and simmer for 15 minutes until rice is tender. Return chicken to skillet, add cream and Parmesan, cook until heated through.
  • Stir in spinach until wilted. Garnish with basil and extra Parmesan before serving.

Notes

For a lighter version, use half-and-half instead of heavy cream.
