A rich and flavorful dish featuring tender chicken in a creamy sauce with sun-dried tomatoes and spinach, served over rice.

Sun-dried Tomatoes

sun-dried tomatoes packed in oil, drained and sliced

Instructions
Season chicken with salt, pepper, and Italian seasoning.
Cook chicken in olive oil until golden, then set aside.
Sauté onion and garlic in butter until softened. Add sun-dried tomatoes and rice, toast for 1 minute.
Pour in broth, cover, and simmer for 15 minutes until rice is tender. Return chicken to skillet, add cream and Parmesan, cook until heated through.
Stir in spinach until wilted. Garnish with basil and extra Parmesan before serving.
Notes
For a lighter version, use half-and-half instead of heavy cream.
