Instructions
Heat a skillet over medium-high heat and sear the salmon fillets seasoned with salt and pepper for 1-3 minutes per side.
Remove salmon and make the sauce by melting butter, adding garlic, and cooking until fragrant.
Add chopped and whole cherry tomatoes, then pour in heavy cream and season with salt, basil, and cayenne.
Simmer the sauce, then stir in parmesan and spinach until thickened.
Add fresh basil and return the salmon to the pan to heat through.
Serve with your choice of sides or on its own.
