Instructions
Pat the salmon dry and season with salt and pepper.
Heat oil and sear salmon 3-4 minutes per side, then set aside.
Sauté onions, sun-dried tomatoes, cherry tomatoes, and garlic for 5 minutes.
Stir in cream, Parmesan, paprika, Italian seasoning, then add spinach and simmer until wilted. Return salmon and cook 5-10 minutes.
