A delicious and creamy salmon dish with sun-dried tomatoes, spinach, and Parmesan, perfect for a quick and flavorful meal.

Ingredients

Protein

  • 3 filets salmon filets (about 1 pound total)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • ½ white onion white onion (diced)
  • ½ cup sun-dried tomatoes in oil
  • ½ cup cherry tomatoes
  • 1 tablespoon minced garlic
  • 1 cup heavy cream
  • ½ cup freshly shredded Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 cup fresh baby spinach

Additional

Instructions 

  • Pat the salmon dry and season with salt and pepper.
  • Heat oil and sear salmon 3-4 minutes per side, then set aside.
  • Sauté onions, sun-dried tomatoes, cherry tomatoes, and garlic for 5 minutes.
  • Stir in cream, Parmesan, paprika, Italian seasoning, then add spinach and simmer until wilted. Return salmon and cook 5-10 minutes.
