Ingredients

Potatoes

  • 4 large Russet Potatoes (rinsed and scrubbed)
  • 3 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Kosher Salt (or to taste)
  • 1/2 teaspoon Black Pepper (or to taste)
  • 1/3 cup Finely grated or shredded Parmesan cheese (divided)
  • 2 tablespoons Fresh chopped parsley

Instructions 

  • Preheat oven to 400°F (200°C) and line baking sheets with parchment paper.
  • Rinse, scrub, and dry potatoes; cut into wedges.
  • Mix oil, garlic powder, onion powder, paprika, salt, and pepper; toss with potato wedges.
  • Arrange wedges on baking sheets, sprinkle with three-quarters of Parmesan cheese, and bake for 30-35 minutes, flipping halfway.
  • Remove from oven, sprinkle remaining Parmesan, garnish with parsley, season as desired, and serve warm.

Notes

For extra crispiness, ensure potatoes are thoroughly dried before baking.
