A hearty and flavorful slow cooker pot roast with tender vegetables and savory gravy, perfect for a comforting family meal.

Ingredients

  • 3-4 pounds chuck roast, fat trimmed
  • 3 tablespoons olive oil
  • 1 yellow onion yellow onion, cut into 1/2" slices
  • 6 cloves garlic, smashed
  • 2 tablespoons tomato paste
  • 2 teaspoons brown sugar
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 2 teaspoons Worcestershire sauce
  • 32 ounces beef stock
  • 2 pounds carrots, peeled and cut into 2-3" pieces
  • 2 pounds baby gold potatoes, halved if large
  • 4 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • 3 tablespoons cornstarch, optional (for gravy)
  • to taste Kosher salt
  • to taste fresh cracked pepper
  • for garnish fresh chopped parsley

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper, then sear on all sides for 4-5 minutes each. Transfer to slow cooker.
  • Cook onions in the same pan until softened, then add garlic, tomato paste, sugar, and spices; cook for 1 minute. Deglaze with Worcestershire and a splash of beef stock.
  • Add the onion mixture, carrots, potatoes, herbs, and remaining beef stock to the slow cooker. Cover and cook on high for 5-6 hours or low for 8-10 hours until the meat shreds easily.
  • Optional: Strain cooking liquid, simmer in a saucepan, and thicken with cornstarch slurry to make gravy. Season with salt and pepper.
  • Garnish with chopped parsley and serve with gravy.

Notes

For best results, sear the meat well and cook low and slow for tender, flavorful results.
