Ingredients

  • 2 fillets chicken
  • 1 cup white rice ((uncooked))
  • 2 cups chicken broth
  • 1 small onion (diced)
  • 1 medium carrot (diced)
  • 1 stalk celery (diced)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions 

  • Place chicken, rice, onion, carrot, celery, and spices in the crockpot.
  • Pour chicken broth over everything.
  • Cover and cook on low for 5-6 hours.
  • Shred the chicken and mix everything well.
  • Serve warm, optionally sprinkle parsley on top.

Notes

For added flavor, consider marinating the chicken beforehand.
