A hearty and flavorful soup perfect for using up leftover turkey and sausage with bold Cajun spices.

Ingredients

Protein

  • 0.75 pound leftover cooked turkey (chopped or shredded)
  • 14 ounces andouille sausage (cut into 1-inch rounds)

Seasonings

  • 1 tablespoon Cajun seasoning (add 1 tsp salt if seasoning lacks salt)

Broth & Vegetables

  • 3 cups low-sodium chicken broth
  • 15 ounces diced tomatoes
  • 0.5 cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 piece bell pepper (chopped)
  • 1 stalk celery (sliced)
  • 1 tablespoon oil (for Instant Pot)

Instructions 

  • Add all ingredients to the slow cooker and stir to combine.
  • Cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  • For Instant Pot, sauté onion, bell pepper, and celery in oil for 3-5 minutes, then add broth and deglaze.
  • Add turkey, sausage, tomatoes, and Cajun seasoning; stir well.
  • Set to manual high pressure for 20 minutes, then quick-release.

Notes

Adjust seasoning to taste and serve hot.
