Fresh and vibrant rice-paper rolls filled with crisp cucumber, creamy avocado, and herbs, perfect for a light, healthy snack or appetizer.
Ingredients
Rice Paper Wrappers

rice paper wrappers (round, 22cm/8½”)
Vegetables and Herbs

English cucumber
(julienned (~150g))

ripe avocado
(thinly sliced)

rice vermicelli
(optional, cooked)

(thinly sliced)

peanut dipping sauce
Instructions
Prepare all ingredients: julienne cucumber and bell pepper, slice avocado, wash mint leaves.
Dip a rice-paper wrapper in warm water for 8–10 seconds, then lay flat on a damp towel.
Layer vermicelli, cucumber, avocado, bell pepper, and mint near the bottom of the wrapper.
Fold the bottom over the filling, then fold sides inward and roll tightly away from you.
Place rolls seam-side down on a plate; let rest for 2 minutes before slicing and serving with peanut sauce.
Notes
Keep the rolls moist by covering with a damp cloth until serving.
